Veal Cutlets in Aluminum FoilIngredients:
- 4 thick veal cutlets (4 ounces each)
- 4 heaping tbsp tomato paste
- 2 small garlic cloves
- 8 fresh basil leaves
- Salt and pepper to taste
Preparation: 1. Pre-heat oven to 400°F. 2. Peel the garlic cloves. In a non-stick pan, sauté the veal cutlets without fat. 3. Place each cutlet on a sheet of aluminum foil and season with salt and pepper. Coat each cutlet with the tomato paste. Grate garlic and spread over each cutlet. Lastly, top each cutlet with 2 fresh basil leaves. Carefully close the aluminum foil. 4. Place in the oven and cook for 12 to 18 minutes (depending on thickness of the meat). Yield: 4 servings
